10,000 Oxygen Transmission Rate (10K OTR) is the rate specified by the USFDA to meet or exceed in order to make vacuum-sealed seafood packaging safe.
Clostridium botulinum (C. botulinum) is a naturally occurring bacteria present throughout our environment, that also exists inside and on fish. This isn’t a problem for fresh seafood that isn’t packaged, but when this bacterium is prevented from breathing oxygen, like when fish is vacuum sealed, it goes into anaerobic mode, at which point it creates Botulinum neurotoxin, which is the toxin responsible for botulism.
When used in vacuum packaging for seafood, 10K OTR film (10,000 Oxygen Transmission Rate), provides protection from environmental contaminants like bacteria, dirt, dust, water, and chemicals, while allowing oxygen to pass through to prevent the anaerobic conditions necessary for toxins to develop.
Due to the potentially fatal outcome of consuming C. botulinum toxin, the US Food & Drug Administration has set a compliance regulation of a minimum 10K OTR for vacuum packaged seafood.
